The scientific answer is:

When the gas exits the can, it goes from a higher pressure into a lower one, the gas volume increases and it absorbs heat energy that results in the gas cooling.  So this is why the deodorant feels always cool on our skin.
Alcohol can also play an important role in this phenomenon because many deodorants contain alcohol, which evaporates very quickly on the skin by cooling it.
